Lemon Bar Puppy Chow

The world has moved on from hoarding toilet paper to apocalypse baking. Flour is hard to come by, sugar is scarce, yeast was gone a long time ago and hasn’t returned yet. Everywhere you look someone is baking some kind of bread. It’s a wild world. I’m turning the attention from bread over to puppy chow because bread is just that new shiny thing, but puppy chow is dependable. It is not fancy, it is not difficult, but it is always there for us which counts for a lot, especially during quarantine. I gave puppy chow a spring makeover, and let me tell you — it tastes just like a lemon bar, but it’s much simpler to make and you can actually find the ingredients for it right now. INGREDIENTS:

1 box rice Chex

1 1/4 C. White chocolate chips

1/3 C. Lemon Curd (I used Dickinson’s)

3 Tbsp. Butter

1 tsp pure almond extract

2 cups powdered sugar

Directions:

  1. Place 1 box of rice Chex in large bowl. Set aside.
  2. Add white chocolate chips, butter, lemon curd, and almond extract into a separate, microwave safe bowl.
  3. Microwave in 30 second increments until smooth, stirring in between.
  4. Once smooth, poor the mixture over the cereal in the large bowl. Gently stir the mixture into the cereal until coated well.
  5. Once coated, spoon the cereal into a gallon bag.
  6. Add in 2 cup of powdered sugar and shake until coated.
  7. Enjoy!
