Single Serve Chocolate Chip Banana Bread: Gluten Free And Drool-worthy

Why single serve chocolate chip banana bread?

“I think I’m going to make Banana Bread this weekend.”

“If I’m being honest, I probably won’t eat any.”

My grandma has this killer chocolate chip banana bread recipe that I wanted to make this weekend. Earlier in the week I saw a banana bread reel and I couldn’t get the idea of the chocolatey banana goodness out of my head. I wasn’t going to break the craving, so I decided to give in. Mash up the bananas, fold in the flour and the chocolate chips. Breathe in the sweet aroma as it baked.

And then Jacob broke my heart because he’s not a big banana bread fan. I was glad he was honest and told me he wouldn’t eat it. Otherwise, I’d be left with an entire loaf of banana bread to myself. While I love it, I can’t eat a whole loaf of banana bread on my own.

I didn’t want to make an entire loaf, but I still wanted it. Enter: single-serve chocolate chip banana bread.

It’s easy. It doesn’t make any extra. It doesn’t need a lot of ingredients. Plus, it’s adorable.

While I love my grandma’s recipe, I wanted to make something gluten free and just a tiny bit healthier since I was making it for myself. While I won’t go so far as to say this is “healthy,” it’s definitely healthier than the traditional recipe thanks to some subbed ingredients. But don’t worry, just because it’s gluten free and “healthier” doesn’t mean it isn’t still absolutely drool-worthy.

What You’ll Need

Wet Ingredients:

  • 1/2 banana
  • 1 egg
  • 1 tablespoon pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tablespoon peanut butter

Dry Ingredients:

  • 1/2 tsp baking powder
  • 1/2 C. Oat flour
  • 1/4 C. Chocolate chips

Directions

  1. Preheat oven to 350 degrees. Prep a ramekin or a small ceramic bread mold by greasing it. I just used my spray avocado oil.
  2. In a small bowl, mash half a banana. Make sure it’s really smooth, and there are no large chunks left. Then add in one egg and whisk until well combined.
  3. Add in maple syrup, vanilla, and peanut butter. Whisk until mixture is well combined.
  4. Add baking powder and oat flour. Using a spatula, fold the batter until the dry ingredients are just combined.
  5. Fold in chocolate chips. Again, mixing until just combined.
  6. Pour batter into prepared ramekin or small ceramic bread mold. Place in pre-heated oven for about 25 minutes. When done, the top will be golden brown. To test, insert a knife or toothpick — single serve banana bread is done when the knife or toothpick comes out clean. Keep in mind, it will continue baking as it cools after being removed from the oven.
